Puffy Pancakes

I wanted to share one of my family's favorite recipes. I got this recipe of of my friend Kris's blog a few years ago. They are so easy and my kids love them. In fact, I made a pan yesterday before I realized it was fast Sunday and my kids ate the entire 9 X 13 pan by themselves. It's really fun for this kids to watch bake because they "puff" up in the oven.

Puffy pancakes

Heat oven to 400 degrees. Melt 1/2 cube butter in 9x13 pyrex dish. I like to melt the butter in the pan while the oven is warming.

6 eggs
1 Cup milk
1 Cup flour
1/2 tsp salt
Use hand mixer and blend well. Pour into 9x13 dish ~ over melted butter. Bake for 18 minutes. Serve warm. Top with powdered or granulated sugar, strawberry jam, fresh fruit or syrup. I always serve this with Buttermilk syrup and it's delish!


Buttermilk Syrup
1 1/2 C Sugar
3/4 C Buttermilk
1/2 C Butter or margarine
2 Tbs Light corn syrup
1 tsp Baking soda
Stir and bring to a boil. Boil for 7 minutes
then add:
2 tsp Vanilla extract
(this will make it rise up quite a bit-make sure you use a larger pot)

This is one of our favorite recipes! We call them "German Pancakes." I will definitely try out your syrup recipe!

My sister gave me this recipe a while ago and I had forgotten all about it! She made it for us last year and the syrup is the best part! YUM!

We love these! We call them popeye pancakes at our house...I don't know why. Blame Nate's family ;)

Hey, we actually had these for dinner tonight! We call them "danish pancakes", but I'm not sure if they're really Danish, or if we made that up. We eat them with raspberries, bananas, and whipping cream.
